December 10, 2019I know that it doesn’t sound near as good as it tastes, but believe me it truly is yummy! If I was a little more creative I would come up with a better name for all you veggie haters out there! 🙂 But feel free to call it whatever you want to get your family to give it a try, because once they taste it, they will love it! This is also a great recipe for those of you trying to commit to “meatless mondays.”
Here is what you need:
- 1/2 onion, chopped

- butter, 1 Tablespoon
- Chicken Broth, 2 cups
- 2 Zucchini, chopped
- Frozen corn, 1 cup
- chopped green chillies, 1 Tablespoon
- salt, 1 teaspoon
- pepper, 1/4 teaspoon
- milk, 1 cup
- shredded cheese, 1/2 cup
Here is how you do it:
Saute onion in butter in a soup pot.
Stir in broth, zucchini, corn, chillies, salt, and pepper.
Heat until soup boils, reduce heat and cover with a lid. Cook about 5 minutes and make sure the zucchini is soft. While you wait enlist help cleaning from a cutie pie. (This step is optional but highly recommended!)
Stir in milk and heat for another 3-4 minutes.
Then add cheese.
I usually serve with some type of bread or crackers. If your kids don’t like chunks in their soup then you can puree the zucchini and corn.
